We're going on a trip next month and the guide is also the owner. Is it customary to tip the guide? If so, how much?

I assume when you say 'guide' you mean 'pilot'. If the pilot also owns the ride business it is not necessary to tip him/her. However, the ground crew (they do all the heavy lifting)always appreciate a tip. I have been a commercial hot air balloon pilot since 1988, and when passengers offer me a tip I decline but tell them they are welcome to tip my crew ($3.00 to $5.00 per crew member is normal).
